FARRO BALSAMIC SALAD
INGREDIENTS:
- 1 cup cooked farro
- 1/4 cup cherry tomatoes, halved
- 1/4 cup chopped cucumber
- 1/4 cup chopped yellow and orange bell peppers
- 2 tablespoons chopped black olives
- 2 tablespoons chopped shallot
- 1 tablespoon extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 2 tablespoons chopped green parsley
- salt and pepper (optional)
- leafy lettuce for garnish
DIRECTIONS:
- Mix first 10 ingredients.
- Arrange lettuce in a bowl and top with farro salad. Makes 1 serving. Great vegetarian recipe!
