GAZPACHO SMOOTHIE
INGREDIENTS:
- 3 cups low sodium V-8 juice
- 1 cup chopped plum tomatoes
- 1/4 cup chopped cucumber
- 1/4 cup chopped celery
- 1/2 avocado, cut
- 2 tablespoons minced shallot or red onion
- 1 clove garlic, minced
- 1/4 cup chopped cilantro or green parsley
- 3 tablespoons red wine vinegar
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon Tabasco sauce
DIRECTIONS:
- Put all ingredients in a blender and process until smooth.
- Makes three 8 oz smoothies.
