MEDITERRANEAN QUINOA
INGREDIENTS:
- 2 cups cooked quinoa
- 1 plum tomato, chopped
- 1/2 cup cucumber, peeled and chopped
- 1/4 cup chopped black olives
- 2 tablespoons chopped shallot, or onion
- 2 tablespoons chopped fresh oregano (or green parsley)
- 2 tablespoon extra virgin olive oil
- 1 tablespoons red wine vinegar
- salt and pepper to taste
- feta cheese for topping (optional)
DIRECTIONS:
- Mix all ingredients, add more vinegar if necessary; top with feta cheese.
Refrigerate before serving.
