MEXICAN SALAD
INGREDIENTS:
- 1 cup yellow corn kernels, cooked and drained
- 1 cup black beans, cooked and drained
- 3 tablespoons finely chopped onion
- 1 avocado, chopped (optional)
- 1 cup chopped tomato
- 1/4 cup chopped cilantro
- juice of 2 limes or red wine vinegar to taste
- 1 tablespoon olive oil
- salt and pepper to taste
DIRECTIONS:
- Mix all ingredients; refrigerate before serving.
