PEPPER - TOMATO SALAD

Kale Pepper Tomato Salad

INGREDIENTS:

DIRECTIONS:

  1. In a nonstick skillet heat 1 tablespoon of olive oil; add cut red onion, peppers, pinch of salt and pepper; saute for about 5 minutes. Move to the serving plate.
  2. Add 1 tablespoon olive oil to the skillet, place cut tomatoes, saute for 2 minutes and add to peppers. Mix in artichokes, black olives, basil, red wine vinegar and remaining 3 tablespoons of olive oil.
