PEPPER - TOMATO SALAD
INGREDIENTS:
- 2 cups mixed yellow, orange and red peppers,
cut into 1 inch pieces
- 1 cup marinated artichokes, drained
- 1 medium red onion, peeled and cut
- 3 plum tomatoes, cut into 1 inch chunks
- 1/2 cup pitted black olives, drained
- 2 tablespoons chopped fresh basil or oregano
- 5 tablespoons olive oil, divided
- 2 tablespoons red wine vinegar
- salt and pepper to taste
DIRECTIONS:
- In a nonstick skillet heat 1 tablespoon of olive oil; add cut red onion,
peppers, pinch of salt and pepper; saute for about 5 minutes. Move to the
serving plate.
- Add 1 tablespoon olive oil to the skillet, place cut tomatoes, saute for
2 minutes and add to peppers. Mix in artichokes, black olives, basil,
red wine vinegar and remaining 3 tablespoons of olive oil.
