PUMPKIN ALMOND SMOOTHIE
INGREDIENTS:
- 1/2 cup homemade pumpkin puree
- 1 cup unsweetened almond milk
- 1 teaspoon almond butter
- 1 teaspoon flaxseed meal
- 1 small banana, sliced
- 1/2 teaspoon pumpkin spice
- cinnamon
DIRECTIONS:
- Homemade Pumpkin Puree:
Preheat oven to 350 °F.
Cut small pie pumpkins in half and remove seeds.
Place pumpkin halves on a large baking sheet, skin side down;
brush with melted butter mixed with canola oil and bake for
45 minutes. Remove from oven, cool, peel and puree in a
food processor.
- Smoothie:
Put all ingredients in a blender and process until smooth.
Makes one 12 oz smoothie.
