SALMON AVOCADO SALAD
INGREDIENTS:
- 1 6 oz can wild salmon, drained, flaked
- lettuce
- 1 avocado, sliced
- 2 tablespoons sliced black olives
- 1 hard boiled egg, quartered
- 4 cherry tomatoes
- Dressing: 2 servings
- 2 tablespoons extra virgin olive oil
- 1/4 cup plain yogurt
- chopped green parsley or chives
- salt and pepper to taste
DIRECTIONS:
- Arrange first 6 ingredients on a salad plate.
- Mix dressing ingredients and pour over salad. Makes 2 servings.
