TURKEY-QUINOA SALAD

INGREDIENTS:

DIRECTIONS:

  1. In a medium pot, bring quinoa and water to a boil, lower heat
    and simmer, covered, until quinoa is tender, about 15 minutes.

  2. Pour some boiling water over dried cranberries and let it stand
    for 10 minutes; drain and add to cooked quinoa along with the
    remaining ingredients.
