TURKEY-QUINOA SALAD
INGREDIENTS:
- 1 cup uncooked quinoa
- 2 cups filtered water
- 1/2 cup dried cranberries
- 1/4 cup minced shallot
- 2 cups cubed cooked turkey
- 1/4 cup red wine vinegar
- 2 tablespoons light olive oil
- 2 cups chopped cucumber, peeled
- salt and pepper to taste
DIRECTIONS:
- In a medium pot, bring quinoa and water to a boil, lower heat
and simmer, covered, until quinoa is tender, about 15 minutes.
- Pour some boiling water over dried cranberries and let it stand
for 10 minutes; drain and add to cooked quinoa along with the
remaining ingredients.
