TURKEY SWEET POTATO PIE

INGREDIENTS:

DIRECTIONS:

  1. Preheat oven to 350° F.
  2. Heat a large skillet with 2 tablespoons olive oil. Add 1/2 chopped medium onion, minced garlic, chopped celery and mushrooms to the skillet, saute for about 2 minutes; move to a large mixing bowl to cool.
  3. Add ground turkey, 2 beaten eggs, poultry seasoning, salt and pepper to the bowl, mix well.
  4. Move the mixture to a lightly oiled, 9 inch glass pie baking pan, press lightly to fit the pan.
  5. Bake in preheated oven for 45 minutes. Check after 20 minutes, if the middle is too high, poke few times with a fork, to make it flat.
    While turkey is baking, prepare mushroom sauce and sweet potatoes.
  6. Cook peeled and cut sweet potatoes for 10-15 minutes in chicken broth, on low, covered. Do not drain, mash with butter, put aside.
  7. Heat 2 tablespoons of olive oil in a medium size skillet, add remaing chopped onion and sliced mushrooms, saute for 2 minutes. Add 3 tablespoons of flour to the skillet, stir in for a few seconds, add chicken broth, and simmer on low for about 30 minutes; add cream, season with salt and pepper, if necessary.
  8. Remove turkey from the oven, sprinkle shredded cheese on top. Cover with foil for 2 minutes to let the cheese melt.
  9. Switch oven temperature to broil. Spread the potatoes over the pie; broil for about 10 minutes, until golden brown .
