TURKEY SWEET POTATO PIE
INGREDIENTS:
- Meatloaf :
1 pound lean ground turkey
- 2 large eggs, beaten
- 1/4 cup ground flaxseed (golden)
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 celery rib, finely chopped
- 4 oz mushrooms, finely chopped
- 1 teaspoon poultry seasoning
- 2 tablespoons olive oil
- salt and pepper to taste
- 1 cup shredded Colby Jack cheese
for topping
- Sauce :
4 oz mushrooms, sliced
- 1/2 medium onion, finely chopped
- 1 cup chicken broth
- 2 tablespoons olive oil
- 3 tablespoons flour
- 2 tablespoons light cream
- salt and pepper to taste
- Sweet Potatoes :
1 pound (2 medium sweet potatoes), peeled, cut
- 3/4 cup chicken broth
- 2 tablespoons butter
- salt to taste
DIRECTIONS:
- Preheat oven to 350° F.
- Heat a large skillet with 2 tablespoons olive oil. Add 1/2 chopped medium onion, minced garlic,
chopped celery and mushrooms to the skillet, saute for about 2 minutes; move to a large mixing bowl to cool.
- Add ground turkey, 2 beaten eggs, poultry seasoning, salt and pepper to the bowl, mix well.
- Move the mixture to a lightly oiled, 9 inch glass pie baking pan, press lightly to fit the pan.
- Bake in preheated oven for 45 minutes. Check after 20 minutes, if the middle is too high, poke few times with a fork, to make it flat.
While turkey is baking, prepare mushroom sauce and sweet potatoes.
- Cook peeled and cut sweet potatoes for 10-15 minutes in chicken broth, on low, covered. Do not drain, mash with butter, put aside.
- Heat 2 tablespoons of olive oil in a medium size skillet, add remaing chopped onion and sliced mushrooms, saute for 2 minutes.
Add 3 tablespoons of flour to the skillet, stir in for a few seconds, add chicken broth, and simmer on low for about 30 minutes;
add cream, season with salt and pepper, if necessary.
- Remove turkey from the oven, sprinkle shredded cheese on top. Cover with foil for 2 minutes to let the cheese melt.
- Switch oven temperature to broil. Spread the potatoes over the pie; broil for about 10 minutes, until golden brown .
